Zucchini with Gnocchi

Ingredients

  • 1 green zucchini
  • 1 yellow zucchini
  • 200 g feta
  • 1 large onion
  • a bunch of parsley
  • half a bunch fresh oregano (or 1 tsp dry oregano)
  • 6 Tsp olive oil
  • 400 g gnocchi
  • salt, black pepper
  • 1 Tsp white balsamico vinegar

Directions

  1. Cut zucchini, feta and onion into small pieces.
  2. Cut (seperately) parsley and oregano.
  3. Heat the oil in a large frying pan and add onions. Fry for about 5 minutes at medium-high heat.
  4. Add the zucchini and oregano. Cook for about 2 minutes.
  5. Cook gnocchi in boiling water.
  6. When gnocchi are done add them to the zucchini.
  7. Add parsley, feta and vinegar. If necessary add pepper and salt.
