Ingredients

  • 3 carrots (or more) (peeled)
  • 4 sweet potatoes (peeled)
  • 3 tart apples
  • 1/2 cup brown sugar
  • 3 Tbsp. margarine (or butter)
  • 1 cup water
  • 1 6-oz. package dried apricots
  • cinnamon, optional

Directions

  1. Preheat oven to 350F.
  2. Cook carrots and potatoes in water until soft.
  3. Drain liquid and slice.
  4. Pare and slice apples.
  5. Alternate layers of carrots, apples, and potatoes with the brown sugar, margarine/butter, apricots, and cinnamon.
  6. Add water, cover, and bake for 1 hour (or until apples are soft). Baste with its own juice occasionally. Remove cover for last 15 minutes to brown top.
