Tortellini

Ingredients
- 1/2 lb ground turkey
- 1 lb ground beef
- 1 lb ground pork or lamb
- 8 oz grated parmesan
- 1 tsp nutmeg
- pinch of ground cinnamon
- small amount of black pepper
- 2 eggs slightly beaten
Directions
- Cook meat and drain
- Cool, then put through grinder
- Add remaining ingredients
Dough
Ingredients
- 3 cups flour
- 2 Tbsp salt (hers called for 1/4 cup, a little too much)
- 3 eggs slightly beaten
- 1 Tbsp oil
- 1/4 cup warm water
Directions
- Make a well on table with flour
- Put salt, eggs, and oil in center of well, mix
- Add warm water
- Mix and form into a ball and place in a towel to rest for 10 minutes
- Cut off section and roll out, keeping the rest in a towel
Assembly
- Use a pizza cutter to make squares from rolled out dough
- Put a teaspoon-size amount of filling in the center of the square, then fold in half diagonally and press the edges together.
- Fold the two points together towards the middle
- Set crown side up on wax papered trays to dry
- Bag up and freeze or cook in broth

This is my aunt Diane's version of my grandmother's family recipe for tortellini. They made a cheese version too but I don't have the recipe for that...
