Giant Lasagna

Ingredients

  • Olive oil
  • 2 onions
  • 2 garlic cloves
  • 1 kg ground beef
  • 6 sweet Italian sausages (remove from casing)
  • salt, pepper, Italian seasoning to taste
  • 1/4 c. Red wine
  • 2 jars of marinara sauce (costco size)
  • 2+ boxes lasagna noodles (uncooked)
  • 3 packages of mozzarella cheese, shredded
  • 3 tubs of cottage cheese
  • Grated Parmesan cheese for topping

Directions

Make the sauce:

  1. Chop onions and garlic and sauté them in olive oil in a large saucepan.
  2. Brown the beef and crumbled sausage
  3. Season with salt, pepper, and Italian herbs.
  4. add red wine and marinara sauce, and simmer until fully cooked.


Assemble and bake:

  1. Preheat the oven to 375F
  2. Coat a really large baking pan (we used a roasting pan) with oil
  3. Put a scoop of sauce into the bottom of the pan and spread it around.
  4. Assemble layers in this order:
    • Noodles
    • Cottage cheese
    • Sauce
    • Mozzarella
  5. Repeat layers until finished.
  6. Sprinkle parmesan on the top layer.
  7. Cover the lasagna with tin foil.
  8. Bake for 1 hour.
  9. Rest for 1/2 hour before serving.
