- 1 Cup flour
- 1/2 tsp. soda
- 1/4 tsp. salt
- 1/2 Cup brown sugar
- 1/2 Cup sugar
- 1/2 Cup butter
- 1 egg
- 1/2 tsp. vanilla
- 1 Cup cornflakes
- 1 Cup rolled oats
- 1/2 Cup coconut
Directions
- Sift together flour, soda and salt.
- Add brown sugar, sugar and butter.
- Blend in egg and vanilla.
- Add dry ingredients + mix in cornflakes, rolled oats and coconut.
- Shape into balls ( 1 tsp. for each) and place on greased sheet.
- Flatten with bottom of glass dipped in flour.
- Bake at 350 °F 8-10 minutes.
Variation
If desired fill with: (sandwich style)
- Melt 1 Cup (6 oz) semi-sweet chocolate chips with 1/2 Cup powdered sugar plus 1 tablespoon water.
- Blend in 3 oz cream cheese. Beat until smooth.
- Let cool.
