Corn on the Cob with Mint-Feta Butter

ingredients

  • 1/2 stick unsalted butter
  • 7 ounces feta (1.5 cups finely crumbled)
  • 1/4 cup finely chopped mint
  • 1/2 teaspoon salt
  • 8 large ears of corn

directions

  1. Put a big pot of water on to boil.
  2. Shuck the corn and cut each cob crosswise into 4 pieces
  3. Put the butter in a big bowl and microwave it to soften it quite a bit.
  4. Crumble in the feta, add the finely chopped mint, and stir it all together with a rounded 1/2 teaspoon salt.
  5. Once the water is boiling, add the corn and cook until crisp-tender, about 3 minutes.
  6. Transfer the corn with tongs to the butter mixture and toss until well coated.
