Corn on the Cob with Mint-Feta Butter

- 1/2 stick unsalted butter
- 7 ounces feta (1.5 cups finely crumbled)
- 1/4 cup finely chopped mint
- 1/2 teaspoon salt
- 8 large ears of corn
directions
- Put a big pot of water on to boil.
- Shuck the corn and cut each cob crosswise into 4 pieces
- Put the butter in a big bowl and microwave it to soften it quite a bit.
- Crumble in the feta, add the finely chopped mint, and stir it all together with a rounded 1/2 teaspoon salt.
- Once the water is boiling, add the corn and cook until crisp-tender, about 3 minutes.
- Transfer the corn with tongs to the butter mixture and toss until well coated.
