20 minutes prep time (less with prepackaged sauce and shredded cheese) 1.5 hours baking/cooling time
Ingredients
- 1 box lasagna noodles (uncooked)
- 4 cups shredded Mozzarella, divided into two 2-cup portions
- 16-ounce tub of cottage cheese
- 3 eggs
- 1/2 cup Parmesan cheese
- Tomato sauce (26-ounce jar or equivalent homemade recipe)
- 2 cups grated carrots
- 1 16-ounce can of tomato juice
Directions
- Preheat the oven to 375F.
- Coat a 9x13" pan with oil.
- Mix together the Parmesan, cottage cheese, and eggs.
- Mix together the sauce and carrots.
- Layer the ingredients 3 times:
noodles, sauce, shredded cheese, egg mixture noodles, sauce, shredded cheese, egg mixture noodles, sauce
- Pour the tomato juice over all.
- Cover the pan with foil, and bake for 30 minutes.
- Remove the foil, and bake for another 30 minutes.
- Top with remaining 2 cups of shredded cheese, and bake for 15 minutes.
- Cool for 15 minutes before serving.
Notes
This recipe is from my cousin Kristy. You can replace the Mozzarella cheese with another mild cheese that will melt nicely, like Swiss or Gouda.
