Ingredients

  • 1 1/2 Cup dark brown sugar
  • 3 tbsp.cinnamon
  • 2 cloves
  • 1 Cup water
  • 1 tbsp. salt
  • 1 6 lbs. duck
  • 2 tbsp. soya sauce
  • 2 tbsp. powdered ginger
  • 1/2 Cup vinegar
  • 3 cloves

Directions

  1. Melt brown sugar in sauce pan over low heat
  2. Add 1/2 the cinnamon, the cloves and water. Cook this mixture until syruppy.
  3. Combine salt and remaining cinnamon and rub the duck inside and out. Place duck on roasting pan.
  4. Combine syrup and soya sauce and ginger and pour over duck.
  5. Roast in oven at 425 °F until golden brown.
  6. Reduce heat to 350 °F and roast until tender, approximately 2 1/2 hours in all.
  7. Mix vinegar and minced garlic cloves and serve with duck.
