Sweet Duck

Ingredients
- 1 1/2 Cup dark brown sugar
- 3 tbsp.cinnamon
- 2 cloves
- 1 Cup water
- 1 tbsp. salt
- 1 6 lbs. duck
- 2 tbsp. soya sauce
- 2 tbsp. powdered ginger
- 1/2 Cup vinegar
- 3 cloves
Directions
- Melt brown sugar in sauce pan over low heat
- Add 1/2 the cinnamon, the cloves and water. Cook this mixture until syruppy.
- Combine salt and remaining cinnamon and rub the duck inside and out. Place duck on roasting pan.
- Combine syrup and soya sauce and ginger and pour over duck.
- Roast in oven at 425 °F until golden brown.
- Reduce heat to 350 °F and roast until tender, approximately 2 1/2 hours in all.
- Mix vinegar and minced garlic cloves and serve with duck.
