Spicy chicken and sweet potato stew

Ingredients

  • 1 teaspoon olive oil
  • 1 onion, chopped (any color or mix)
  • 4 cloves garlic, minced (or garlic ginger paste)
  • 1 pound sweet potato, peeled and cubed
  • 1 orange bell pepper, seeded and cubed
  • 1 pound chicken breast, cubed
  • 1 can diced tomatoes with peppers or not
  • 2 cups broth (i used thai soup chicken broth)
  • 1 teaspoon salt
  • 1 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • ¼ teaspoon red pepper flakes
  • 1 (16 ounce) can kidney beans, rinsed and drained

Directions

  1. Heat olive oil in a large pot over medium heat. Stir in onion and garlic; cook and stir until the onion has softened and turned translucent, about 5 minutes.
  2. Stir in sweet potato, bell pepper, and 2 cups of broth.
  3. Season with salt, chili powder, cumin, oregano, cocoa powder, cinnamon, and red pepper flakes.
  4. Increase heat to medium-high and bring to a boil.
  5. Reduce heat to medium-low, cover, and simmer until the potatoes are tender but not mushy, 20 minutes.
  6. Stir the stew occasionally to keep it from sticking.
  7. Add chicken and tomatoes and cook for 10-15 minutes until chicken is cooked through.
  8. Once the potatoes are done, stir kidney beans.
  9. Cook a few minutes until hot, then adjust seasoning, and serve.

Notes

original recipe from allrecipes included the following:

  • 1 teaspoon cocoa powder (left this out)
  • ¼ teaspoon ground cinnamon (left this out)
  • 1 ½ tablespoons all-purpose flour (left this out)
  • 2 tablespoons water
  • 1 cup frozen corn
  • ½ cup chopped fresh cilantro

plus one more tbsp of chili powder, i left these off because i used the thai broth that was already seasoned, and giles hates corn etc Sara (talk) 05:37, 12 June 2024 (PDT)
