Collard Greens

Ingredients

  • 1 bunch fresh collard greens
  • 2-3 slices of bacon
  • 1/2 cup chicken broth
  • 2 tablespoons olive oil
  • 4 tablespoons tomato paste
  • 1 small onion, sliced thin
  • 3 minced garlic cloves
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon salt
  • 1 teaspoon sugar

Directions

  1. Wash the collards. Trim off the ends of the stems, and chop the rest into bite-sized pieces.
  2. Fry the bacon until cooked through, and remove from the pan to let it cool on some paper towels.
  3. Combine the remaining ingredients in the pressure cooker and put over high heat.
  4. Chop up the bacon and add it along with the collards to the pan, and mix to incorporate.
  5. Pressure cook at high pressure for about 20 minutes.
  6. Natural release.
