Ingredients
- 2-3 tbsp softened butter
- 12 slices white bread
- 1/2 lb fresh mushrooms, sliced
- 2 cups thinly sliced yellow onion
- 4 oz (1 stick) butter
- 1 1/2 lbs mild Italian sausage (Jimmy Deans patty sausage)
- 1 lb cheddar cheese, grated
- 5 eggs (6)
- 2 1/2 cups milk (3)
- 3 tsp Dijon mustard
- 1 tsp nutmeg
- 1 tsp dry mustard
- 2 tbsp chopped fresh parsley (optional)
Directions
Prepare a day ahead:
- Butter bread with softened butter, set aside.
- Sauté the mushrooms and onions in 4 ounces of butter until soft; 5-10 minutes.
- Cook the sausage and cut into bite size pieces.
- In a greased 13x9in casserole, layer half the bread, mushroom/onion mixture, sausage, and cheese.
- Repeat the layering, ending with the cheese.
- Mix the eggs, milk, mustards (prepared and dry), and nutmeg together and pour over the casserole.
- Cover and refrigerate overnight.
The next morning
- Preheat the oven to 350°.
- Sprinkle the casserole with parsley.
- Bake (uncovered) for 1 hour or until bubbly.
- Serve immediately.
Notes
There's some room for modification here, the mushrooms could be swapped out for example...
