"Vanishing Oatmeal Raisin Cookies" Adapted from Quaker Oats (substituting chocolate chips for raisins) Yield: about 2 dozen 10 minutes preparation time, 10-12 minutes baking time per batch
Ingredients
- 1/4 lb (1 stick) butter
- 1/2 cup firmly packed brown sugar
- 1/4 cup white sugar
- 1 egg
- 1/2 teaspoon vanilla extract
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1.5 cups dry oatmeal (not instant)
- 1/2 cup semisweet chocolate chips
Directions
- Preheat oven to 350F.
- Beat together butter and sugars until creamy.
- Add egg and vanilla; beat well.
- Combine flour, baking soda, cinnamon, and salt in a bowl.
- Add flour mixture to butter mixture; mix well.
- Stir in oats and chips; mix well.
- Drop by rounded tablespoonfuls onto ungreased cookie sheet.
- Bake 10-12 minutes or until golden brown.
- Cool 1 minute on cookie sheet; remove to wire rack.
