"Vanishing Oatmeal Raisin Cookies"
Adapted from Quaker Oats (substituting chocolate chips for raisins)
Yield: about 2 dozen
10 minutes preparation time, 10-12 minutes baking time per batch

Ingredients

  • 1/4 lb (1 stick) butter
  • 1/2 cup firmly packed brown sugar
  • 1/4 cup white sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1.5 cups dry oatmeal (not instant)
  • 1/2 cup semisweet chocolate chips

Directions

  1. Preheat oven to 350F.
  2. Beat together butter and sugars until creamy.
  3. Add egg and vanilla; beat well.
  4. Combine flour, baking soda, cinnamon, and salt in a bowl.
  5. Add flour mixture to butter mixture; mix well.
  6. Stir in oats and chips; mix well.
  7. Drop by rounded tablespoonfuls onto ungreased cookie sheet.
  8. Bake 10-12 minutes or until golden brown.
  9. Cool 1 minute on cookie sheet; remove to wire rack.
