#Heat olive oil in a large pot over medium heat. Stir in onion and garlic; cook and stir until the onion has softened and turned translucent, about 5 minutes.&lt;br /&gt;

#Season with salt, chili powder, cumin, oregano, cocoa powder, cinnamon, and red pepper flakes.&lt;br /&gt;
#Increase heat to medium-high and bring to a boil.&lt;br /&gt;
#Reduce heat to medium-low, cover, and simmer until the potatoes are tender but not mushy, 20 minutes.&lt;br /&gt;

Bake at 350F for 8 to 10 minutes. Cool 1 minute; remove from sheets. Cool completely. Spread jam between 2 cookies, sandwich-style. Dust with powdered sugar if desired. &lt;br /&gt;

The original recipe (by Julius Lilenthal) had both a chocolate frosting and jam sandwiched between the cookies (spread jam first, then frosting). Babbi never made it that way though. &lt;br /&gt;

Chocolate Frosting: Melt 6oz (1 cup) of semi sweet chocolate morsels with 1/4 cut cream over hot water. Stir in 2 tablespoons butter, 1 teaspoon rum flavor and 1/2 cup confectioners sugar. &lt;br /&gt;

I just updated this recipe so it now uses fresh broccoli and a bechamel sauce recipe instead of a can of condensed cream of something soup, and to omit the tofu, which is how we currently make it. I also updated the bread crumbs - my mom always made it with fresh torn up bread, not dry breadcrumbs, and it&amp;#039;s really good that way. We&amp;#039;ve also made this with every green we&amp;#039;ve come across (chard, sorrel, mustard, beet greens, red cabbage, green cabbage, napa cabbage, and unknown Chinese greens from the civic center farmer&amp;#039;s market) and it always comes out fine. This is actually a good soup to use greens that you have around but some people in the house don&amp;#039;t like (beet greens are not popular here), because any bitter flavor gets subsumed by the vinegar and hot sauce. We&amp;#039;ve never used superfine sugar, just regular granulated sugar (ours is some kind of blonde organic kind and it works fine, isn&amp;#039;t gritty). When we make this we usually put the container that&amp;#039;s going to hold the finished ice cream in the freezer while we prepare the batter and run the ice cream maker. Also, cooling the batter in the fridge first for a while before pouring into the ice cream maker seems to work better.&lt;br /&gt;

Variations: We&amp;#039;ve replaced the vanilla bean with a tablespoon of rather strong cinnamon, which made an almost hot cinnamon ice cream. Next up we&amp;#039;re going to try melting in some chocolate chips.&lt;br /&gt;

    While the greens are soaking, put the chicken broth, oil, tomato puree, onion, garlic, and vinegar into the bottom of the pressure cooker and stir to combine the ingreedients.&lt;br /&gt;
    Remove the greens from the sink one at a time, disturbing the water as little as possible. The dirt will remain on the bottom and the greens will float to the top.&lt;br /&gt;
    Remove the thickest parts of the stems at the base of the greens and chop the stems nto small pieces. Then, place the greens on top of one another and roll them into cigar-shaped bundles. Cut the greens into one or two inch wide pieces.&lt;br /&gt;
    Toss the greens and stems with the sugar and salt. Then, add them to the pot and toss to coat with the oil mixture.&lt;br /&gt;

The original recipes this is based on used a loaf of stale bread or cooked wild rice instead of quinoa, and kale instead of chard, and emmentaler instead of gruyere. #Add the remaining 1 Tbsp butter.&lt;br /&gt;
#Add the garlic and cook for 5 more minutes, allowing the mixture to lightly brown.&lt;br /&gt;
#Add the stock and bouquet garni and bring the mixture to a boil. Once the soup has come to a rolling boil reduce to a simmer, cover, and cook for 25-30 minutes.&lt;br /&gt;

#Puree the soup, slowly adding the Gruyere. Add the cream up to about 3/4 c to the desired thickness. Adjust the seasoning.&lt;br /&gt;

We make this pretty frequently and usually use beef broth or veggie broth instead of chicken, just because that&amp;#039;s what we&amp;#039;ve had on hand (and it&amp;#039;s really good with beef broth). I think this recipe really wants to make a white soup (calls for white pepper, etc), but we never bother with that. We&amp;#039;ve also made it with romanesco and the flavor is similar. Giles really loves this. :)&lt;br /&gt;
