Bake at 375F (190C) for 10 minutes.

Ingredients

  • 250g butter
  • 300g sugar
  • 100g almond paste
  • 1 egg
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon cardamom
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon mace
  • 1/4 teaspoon salt
  • 500g sifted flour
  • Extra flour for the baking sheets

Directions

Cream the butter, sugar, and almond paste. Add the egg, cinnamon, cardamom, cloves, mace, salt, and sifted flour. Let the dough rest for 2 hours.

Role out the dough to the desired thickness (1/8 inch) and use cookie cutters to cut out shapes. Repeat until all the dough is used.

Bake at 375F in the middle level of the oven for 10 minutes.

Notes

I always use salted butter and leave out the salt.

Traditionally, these are made in special molds which you can buy in specialty stores. 100g of sliced almonds (total, not per cookie) can be added to the backs of the cookies after they've been added to the molds for an especially festive note. I generally skip this, as it tastes just as good without them and is a lot more work.
