"Majestic and Moist Honey Cake"

10 minutes preparation time, 45-55 minutes baking time

Ingredients

  • 1 cup plus scant 3 tablespoons of all-purpose flour
  • 1 teaspoon baking powder
  • 1/3 teaspoon baking soda
  • scant 1/4 teaspoon kosher salt
  • 1 heaping teaspoon cinnamon
  • up to 1/2 teaspoon lebkuchengewürz or up to 1/4 teaspoon each of ground cloves and allspice
  • 1/3 cup vegetable oil
  • 1/3 cup honey
  • 1/2 cup sugar
  • scant 3 tablespoons brown sugar
  • 1 large egg at room temperature
  • 1/2 teaspoon of vanilla extract
  • 1/3 cup warm coffee or strong tea
  • scant 3 tablespoons orange juice
  • scant 2 tablespoons rye or whiskey (we always use rum)
  • sliced or slivered almonds to decorate the top

Directions

  1. Preheat oven to 350F.
  2. Generously grease a loaf pan with oil.
  3. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and lebkuchengewürz (or cloves and allspice).
  4. Make a well in the center and add oil, honey, sugar, brown sugar, egg, vanilla, coffee or tea, orange juice, and rye or whiskey or rum. (If you measure the oil before the honey, it will be easier to get all the honey out of the measuring cup.)
  5. Using a strong wire whisk or an electric mixer on slow speed, stir together well to make a thick, well-blended batter, making sure that no ingredients are stuck to the bottom.
  6. Spoon the batter into the pan.
  7. Sprinkle the top evenly with almonds.
  8. Place the loaf pan on two baking sheets stacked together (this will ensure the cake bakes properly with the bottom baking faster than the interior and top).
  9. Bake until cake tests done, that is, it springs back when you gently touch the cake center; 45-55 minutes.
  10. Let cake stand for 15 minutes before removing from pan.

Notes

We've tried lots of substitutes for the orange juice when we don't have it handy, but it really is the best way to make this.
