Double Crunchers

Ingredients

  • 1 Cup flour
  • 1/2 tsp. soda
  • 1/4 tsp. salt
  • 1/2 Cup brown sugar
  • 1/2 Cup sugar
  • 1/2 Cup butter
  • 1 egg
  • 1/2 tsp. vanilla
  • 1 Cup cornflakes
  • 1 Cup rolled oats
  • 1/2 Cup coconut

Directions

  1. Sift together flour, soda and salt.
  2. Add brown sugar, sugar and butter.
  3. Blend in egg and vanilla.
  4. Add dry ingredients + mix in cornflakes, rolled oats and coconut.
  5. Shape into balls ( 1 tsp. for each) and place on greased sheet.
  6. Flatten with bottom of glass dipped in flour.
  7. Bake at 350 °F 8-10 minutes.

Variation

If desired fill with: (sandwich style)

  1. Melt 1 Cup (6 oz) semi-sweet chocolate chips with 1/2 Cup powdered sugar plus 1 tablespoon water.
  2. Blend in 3 oz cream cheese. Beat until smooth.
  3. Let cool.
